- Unwrap the Boursin cheese and place the whole round in the center of the dish, right on top of the pasta and zucchini.
- Pour the broth (or water) evenly over the contents of the dish, ensuring most of the pasta is submerged. Gently press down any pasta pieces that are sticking up above the liquid.
- Cover the casserole dish tightly with foil and bake for 25 minutes.
- Carefully remove the foil (watch out for the steam), then gently stir the pasta and zucchini around the Boursin to encourage it to start melting into the broth.
- Return the dish to the oven uncovered and bake for another 10–15 minutes, stirring once halfway through, until the pasta is tender and most of the liquid has transformed into a creamy sauce. If needed, add a splash of hot broth or water, stir, and bake for an additional 5 minutes.
- Once the pasta is cooked to your liking, vigorously stir and mash the melted Boursin into the pasta and zucchini until the sauce is smooth and creamy, coating everything beautifully.
- Allow the dish to sit for 3–5 minutes on the counter; it will thicken slightly as it cools. Serve warm, scooping straight from the dish, ensuring every serving has a delightful mix of noodles, roasted zucchini, and that rich, creamy herb cheese.
