Step 1: Prepare the Base
Spread the sliced onion evenly across the bottom of the slow cooker.
Step 2: Add the Potatoes
Place the halved baby potatoes on top of the onions, arranging them in an even layer. If any potatoes are especially large, cut them into quarters so they cook evenly.
Step 3: Add the Butter and Seasonings
Scatter the cubed butter over the potatoes. Sprinkle the dry onion soup mix evenly on top, then pour the broth around the edges of the slow cooker.
Step 4: Cook
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the potatoes are fork-tender.
Tip: Avoid stirring during cooking, as this can cause the potatoes to break apart.
Step 5: Rest and Serve
Once the potatoes are tender, switch the slow cooker to the WARM setting and let them rest for about 10 minutes before serving. This allows the potatoes to absorb the flavorful juices. Serve hot and enjoy.
