- Begin by placing the roughly chopped red cabbage and fresh blueberries into a large pot. The colors will already start to mix beautifully!
- Pour in the 4 cups of water, then bring the mixture to a gentle boil over medium heat. Enjoy the delightful aroma wafting as it heats up.
- Once boiling, reduce the heat and let it simmer for about 20–30 minutes. You’ll notice the cabbage softening and the blueberries bursting, releasing their juice and turning the mixture into a captivating purple.
- After simmering, strain the mixture through a fine mesh sieve. Use the back of a spoon to gently press down and extract as much of the vibrant liquid as possible.
- Return the strained liquid to the pot over low heat, and stir in the honey (or sugar) until completely dissolved. Taste it and adjust sweetness if desired.
- Add the fresh lemon juice to the pot and mix well. This will brighten up the syrup with a lovely zing that complements the sweetness.
- Allow the syrup to cool completely before carefully pouring it into sterilized glass bottles for preservation.
