- Start by spraying the inside of a 5- to 6-quart slow cooker insert with nonstick cooking spray to ensure easy removal of your delicious casserole.
- In a skillet over medium heat, cook the thick-cut bacon until it reaches a wonderfully crispy texture, about 8–10 minutes. Once done, transfer the bacon to a paper towel-lined plate to drain, and crumble it up once it’s cool enough to handle. Don’t forget to reserve about 2 tablespoons of the flavorful bacon fat in the pan!
- In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, kosher salt, and black pepper. Stir them together until the mixture is smooth and well blended.
- Add the frozen diced hash brown potatoes into the bowl, along with 1 1/2 cups of the shredded cheddar cheese and about two-thirds of the crumbled bacon. Using a gentle folding motion, combine everything until the potatoes are nicely coated.
- Spoon the potato mixture into the prepared slow cooker insert, spreading it out evenly and pressing down lightly for an even cook.
- Cover the slow cooker and set it to cook on HIGH for 3–4 hours or on LOW for 6–7 hours, until the potatoes become tender and the edges begin bubbling with excitement.
- About 20–30 minutes before you’re ready to serve, drizzle the reserved bacon fat over the top, then sprinkle the remaining 1/2 cup of shredded cheddar cheese and the crumbled bacon on top. Cover and let it cook for those last few delicious moments.
- If you want to achieve an extra-crispy top, feel free to place the oven-safe slow cooker insert under the broiler for 2–4 minutes, but keep a close eye on it to prevent burning.
- Once the cheese is melted and the edges are beautifully golden, switch your slow cooker to the WARM setting. Let it sit for 5–10 minutes to settle, then serve directly from the insert for a delightful family-style meal.
