- Preheat your oven to 375°F (190°C). If you prefer easier cleanup, lightly grease an oval glass baking dish with olive oil or butter.
- Pat the chicken pieces dry with paper towels. Optionally, season both sides with a little salt and black pepper for that extra zing.
- Arrange the chicken pieces in a single layer in the greased baking dish, meaty side facing up.
- Scatter the sliced green bell pepper evenly over and around the chicken pieces, tucking some strips between the chicken to infuse every bite with flavor.
- In a medium bowl, stir together the crushed tomatoes and the packet of dry Italian salad dressing mix until everything is well combined and fragrant.
- Pour the luscious tomato and seasoning mixture evenly over the chicken and peppers, making sure everything is beautifully coated.
- Cover the baking dish tightly with foil. Place it on the middle rack of your preheated oven and bake for 45 minutes, letting those incredible aromas fill your kitchen.
- After 45 minutes, carefully remove the foil and spoon some of that delectable sauce over the tops of the chicken pieces.
- Return the uncovered dish to the oven and bake for another 20 to 30 minutes, or until the chicken is very tender and cooked through, reaching an irresistible golden brown color.
- Once done, allow the casserole to rest on the counter for about 5 to 10 minutes before serving to let the flavors meld.
- To serve, scoop generous portions of chicken, peppers, and sauce over a bed of pasta, rice, or noodles for a complete meal!
